A.P2YES You have briefly considered the factors that need to be considered when planning and creating a two-course meal and have produced a plan to produce a three-course meal. You only needed to produce a plan for two-courses, but we agreed you could produce a started, main course and dessert.

Distinction

A.D1Explain how the purchasing cycle and the use of appropriate documents improve the control of food purchases.
B.D1Demonstrate professional, independent and creative working methods in the preparation, cooking and presenting of the two- course meal. Description of activity undertaken: • what the learner did • the evidence provided/questions asked, and answers given: Dieter selected, weighed and measured all the ingredients needed for the meal. Dieter selected and used the correct equipment to prepare these ingredients and prepared them as per the plan. Dieter cooked all ingredients and dishes as per the prepared plan and presented these in an attractive manner. Throughout the practical session, Dieter maintained an excellent standard of hygiene, using clean as you go and ensuring the work areas were kept free of equipment and waste. Dieter presented himself in the correct uniform and demonstrated high standards of personal hygiene. Dieter was able to demonstrate these skills with limited support as he required some assistance to finish and present the dishes for service. Please state the evidence this record is in support of:
